Viennoiserie Baker – Artisan Croissants, Danishes & Signature Pastries

Location: Central London
Working hours: Rotating shifts: Morning 6AM start/ Day time, Evening Shifts; 5 days per week, incl. weekends and bank holidays.

We are recruiting experienced Bakers to join a premium bakery brand in the heart of London, renowned for its artisanal techniques, eye-catching presentation, and consistently high quality. This kitchen blends tradition with creativity, where excellence, precision, and visual perfection come together every day.

The Role

As a Pastry Baker, your role will focus on the daily production of viennoiserie (croissants, danishes, pain au chocolat); proofing and baking; decorative finishing using glazing, piping, icing, and other techniques.

Your key responsibilities will include:

  • Proofing doughs to the required standard, ensuring consistent quality and structure
  • Baking, finishing, and decorating viennoiserie products with consistency and attention to detail
  • Using piping bags, glazing, icing, filling, dusting, and other finishing techniques to decorate pastries to company standards
  • Working closely with the production team to ensure smooth daily operations
  • Maintaining a clean, organised, and hygienic workstation at all times
  • Preparing ingredients, doughs, and workstation setup for the following day's production
  • Following standardised recipes, production methods, and quality procedures
  • Reporting any equipment, maintenance, or production issues to management promptly

    About You:

    • Previous experience as a Baker in a bakery, French patisserie, sweet pastry shop.
    • Skilled in croissant pastry / viennoiserie preparation
    • Confident in dough handling, shaping, proofing, and baking techniques
    • Experienced in decorating baked goods using cream, icing, and glazes
    • Reliable, self-motivated, and a strong team player
    • Great organisational skills and at multitasking
    • Able to maintain high hygiene standards and follow precise recipes
    • Available working weekends and bank holidays
    • Available to start at 6AM including on Sundays and bank holidays.
    • UK Work permit valid for min 2 years.
    • Good Basic Spoken English.

    Food Hygiene Certification is an advantage but not essential.
    Basic spoken English and the right to work in the UK are required.
